Your role:
ORGANISATION: Reports to the head waiter. Gives operational instructions to the chefs de rang and commis.
OBJECTIVE: To serve wines and other alcoholic and non-alcoholic beverages.
MAIN TASKS:
1. Stock and wine management:
- - advises on wine purchases in consultation with the maître d'hôtel, restaurant manager or F&B manager
- - checks orders and deliveries: checks bottling, corks and labels
- - stock management: sorting and storing wines; monitoring storage conditions (cellar temperature, humidity, light, vibrations, odours), ensuring the necessary rotation
- - sets up the cellar for the day: ensures the daily stock of wines according to a certain assortment and has the wines racked or chilled depending on the type, and decanted
- - gives work instructions to the clerk or cellarman (storekeeper)
2. Wine sales:
- - advises customers on wine and food pairings
- - provides explanations of origin (wine-growing region), year of production, taste, colour, etc.
- - puts together the wine and drinks lists
- exerce des activités en vue de stimuler la vente (par ex. soirées sur le thème des vins, dégustations, etc.)
- assure les animations nécessaires
3. Service:
- - takes orders, fetches the appropriate wines and glasses (or gives instructions to the clerk), opens the bottle, sniffs the cork, serves, lets the customer taste, asks for their opinion and serves the other guests in accordance with the service rules - organises wine tastings
- - is constantly attentive to the customer's wishes - participates in room service during the service - keeps work equipment tidy and clean
