Oriented to the South, our chalky soil offers drainage and irrigation qualities which are ideal for the production of sparkling wines made according to the traditional method. This white chalk soil presents an un paralleled mineral richness and gives subtlety and freshness to our vintages.

Brut Blanc de Blancs

The Cuvée Blanc de Blancs from Domaine du Chant d'Eole brings out the finesse, freshness and elegance of Chardonnay, the Domaine's signature grape variety.

Brut Rosé

Our Cuvée Brut Rosé is a blended rosé made from Chardonnay, Domaine du Chant d'Eole's signature grape variety, and Pinot Noir, vinified as a red wine. signature grape variety of Domaine du Chant d'Eole and Pinot Noir, vinified as a red wine.

Cuvée Réserve

The Cuvée Réserve from Domaine du Chant d'Eole asserts the finesse, complexity and roundness of Chardonnay. Its vinosity and surprisingly fresh finish are particularly particularly appreciated by the most discerning connoisseurs.

Cuvée Sous Bois

 Our Cuvée Extra Brut sous bois célèbre celebrates tradition and distinguishes itself with its harmony and delicacy, bringing terroir and elegance together. Made from Chardonnay, this exclusive cuvée is vinified in oak barrels, aged in oak on lees during 9 months followed by another aging of 18 months on lees in bottle.

Cuvée L'Absolu

  ​The Cuvée ‘L’Absolu’, aged for a minimum of 80 months, celebrates our 10 years of passion and know-how in the heart of our estate. A limited edition of 5,000 bottles, numbered and labeled by hand.

BelBul

All of our cuvées Chant d'Eole are labeled "BelBul".


The Chant d'Eole cuvées are labeled "BelBul". "BelBul" is the official label for Belgian sparkling wines, made according to the traditional method. This label guarantees a superior quality and a local know-how - an excellence that we find in each bubble.


This label ensures that winemakers meet strict criteria which guarantee the quality and authenticity of their sparkling wines:

  • made according to the traditional method
  • they benefit from the AOP label (appellation d'origine protégée or protected designation of origin)
  • they are 100% Belgian, which means that grape growing and winemaking both happen in Belgium (buying grapes from abroad is not allowed)

and our vineyard is a Belgian family owned business.

Thanks to these rigorous criteria, "BelBul" ensures a respect of the highest quality standards.

Brut Blanc de Blancs


Grape variety: 100% Chardonnay.

The Cuvée Brut Blanc de Blancs asserts the finesse, freshness, elegance and roundness of Chardonnay, the Domaine's signature grape variety.

After at least 18 months cellar aging, our Blanc de Blancs develops an inimitable golden yellow with a fine, delicate train of bubbles.

The moderate dosage of this wine, its low sulphur content and the fact that it is returned to the cellar for further aging after disgorging, gives it a perfect balance.  

Our Blanc de Blancs will go perfectly with alln of your festive events. As an aperitif, on a seafood platter or with fish, such as sea bass carpaccio with citrus fruit.

Our sommelier's opinion


With its brilliant golden yellow colour, the bubbles are fine and delicate.


The nose is complex. Initially, fruit aromas emerge: citrus and white fruits (apple, pear). Then notes of aging emerge: buttery, toasted, roasted hazelnuts (typical of Chardonnay). Notes of apricot and peach complete the aromatic palette.


The palate is full-bodied. A rich, mouth-watering wine, between tension and roundness. Harmonious on the palate, with notes of cooked apples and juicy pears, underlined by a fresh, ripe citrus fruit aroma.



Brut Rosé


Grape variety: 90% Chardonnay and 10% Pinot Noir.

After at least 18 months in the cellar, the Brut Rosé asserts its finesse with a blend of Chardonnay and Pinot Noir. The Chardonnay brings the finesse and vivacity of a great rosé, while the Pinot Noir offers a harmonious and delicate complexity. Its brilliance, pale pink tints and fine, delicate train of bubbles, its aromas of citrus fruit and red berries seduce.

The wine's moderate dosage, its low sulphur content and its return to the cellar for further additional aging time after disgorgement give it a maturity where Chardonnay and Pinot Noir can develop their full authenticity and purity.

Our Cuvée Brut Rosé goes well with wild salmon or sushi. As a dessert, it will also sublimate the flavours of red fruits...

Our sommelier's opinion


Its colour is a radiant pink-gold with warm reflections.


For its nose, we can find the noble notes of red berries and citrus with touches of red currant, cherries, wild strawberries and ripe mandarin. 


On the palate, there is a subtle structure, length and liveliness. The bubbles are silky. The attack is precise and elegant, followed by a slightly raspberry finish and a lovely freshness.



Cuvée Réserve Millésimée


Grape variety: 100% Chardonnay.


Domaine du Chant d'Eole's Cuvée Prestige brings out the finesse, complexity, elegance and roundness of Chardonnay, the Domaine's signature grape variety. Its vinosity and surprisingly fresh finish are particularly appreciated by the most discerning connoisseurs.


After at least 48 months in the cellar, our Réserve cuvée takes on an unmistakable golden colour with a straw hue, and a fine, delicate train of bubbles. This prolonged aging encourages the development of fine aromas such as apple pie, hazelnut, toasted almond, brioche and buttered toast.


The moderate dosage of this wine, its low sulphur content and its return to the cellar for additional aging time after disgorging give it perfect balance.

Our cuvée Millésimée goes perfectly well with caviar, seafood, a nice lobster as well as grilled fish.

To the eye, this wine is a magnificent brilliant gold colour with a hint of straw, its bubbles are sublte and elegant.

The nose is complex, with aromas of great finesse: brioche, buttered bread, toasted (due to the age of the wine and the grape variety), toasted almonds. The nose evolves and is complex.

Supple and broad on the palate, this wine is rich and harmonious. Good length. On evolution and maturity.



Cuvée Extra Brut Sous Bois


Grape variety: 100% Chardonnay.


Our cuvée Extra Brut sous bois celebrates tradition and stands out thanks to its harmony, its subtlety which bring together terroir and elegance. The very definition of purity and authenticity, it sublimes all of the attention and necessary work needed to reveal the essence of its unique terroir.


This exclusive cuvée is vinified in oak barrels. Made from the selection of our best grape juices during the press, this cuvée is the result of an oak barrel aging with fermentation lees during 9 months, followed by an additionnal 18 months of aging in bottle.

 

The Domaine du Chant d'Eole developped this new cuvée in order to accompany each moment of exception. This refined cuvée is destined to sublime an exceptional dining experience,  featuring harmonious food-and-wine pairings.


Whether you chose to enjoy this wine now or let it age for up to 5 years in you cellar, this cuvée will pair perfectly with poultry or white meats served with a creamy sauce—a pairing that will highlight its unique character, bouquet, and aromas.

Cuvée Anniversaire l'Absolu


Grape variety: 100% Chardonnay.


Inspired by its exceptional terroir and elaborated with care, this cuvée captures the essence of the family's patrimony, dear to the Chant d'Eole for the 10 years anniversary of the vineyard. 
Made from Chardonnay and the selection of our best grape juices during the press, this cuvée is the result of an 80 months long aging process. Numbered and labeled by hand, limited to 5,000 unique bottles and based on ancestral expertise, this cuvée is the very definition or rarity. 


Whether you chose to enjoy this wine now or let it age for up to 15 years in you cellar, this cuvée will pair perfectly with a dish featuring a premium fish (turbot, John Dory) with a lemon-flavored white butter, or a premium poultry (capon, poularde) with a sauce made with morels or other wild mushrooms—a pairing that will bring out its unique character, bouquet, and aromas. Visually, this wine presents a beautiful and shiny golden colour with subtle and delicate bubbles.


For its nose, this wine gives off the aroma of fresh brioche straight out of the oven. This initial aroma then evolves into notes of butter, toast, and roasted hazelnuts, along with the ripe aromas characteristic of Chardonnay.


On the palate, it reveals a creamy texture and a comforting quality. The palate is complex and rich, with buttery notes of toasted brioche. Playing on contrasts, the finish is more tart.​
