Le Domaine dispose aujourd'hui de deux restaurants : une brasserie conviviale, la Brasserie d'Eole, et un restaurant 1 étoile au Guide Michelin, l'Impératif d'Eole, , ainsi que d'un pôle évènementiel.
Your role:
ORGANISATION: Reporting to the chef de partie or cook. The kitchen labourer or commis works under the supervision of a manager (either for hot preparations, cold preparations or desserts). He/she prepares food according to the cook's instructions. He/she receives progressive training, following the instructions of the chef de partie and/or the cook.
OBJECTIVE: Setting up, preparing, arranging and garnishing dishes
MAIN DUTIES: He/she is responsible for the work entrusted to him/her by his/her chef de partie and/or the cook:
1. Preparatory work: help with setting out the food:
- cleans, washes, peels, cuts, chops and cooks vegetables (fruit)
- prepares garnishes, cold sauces, soups, starters and desserts, salads, etc.
- roasts (simple method) and cuts
2. During service:
- assists the chef de partie or cook with preparations; follows his/her instructions
3. After the service:
- rids
- ensures the hygienic preservation of foodstuffs
- cleans the work area and tools
- keeps the kitchen tidy and clean
- complies with safety standards during work
- orders, receives and checks goods according to the instructions of the chef de partie and/or cook.
